SIMCAS Posted July 2, 2008 Report Share Posted July 2, 2008 On the f word last night chef Ramsey was shown how to skin a pigeon by dislocating its wings and peeling the bird like a banana. I've watched the replay several times and can't see how to do it in enough detail to try myself - any advice would be appreciated. Cushat Posted July 3, 2008 Report Share Posted July 3, 2008 It is fast to do, but then you're left with the meat on the crown so still have to remove the breasts - but I find it just as quick to peel the skin back (complete with feathers) on the breast area and debreast with a knife.
