chris o Posted October 4, 2009 Report Share Posted October 4, 2009 yep matey they are woodies they will be this years birds and make excelent eating i normally do them with sauted shallotts garlic and some herbs and red wine but wit me being a chef i am constantly inventing new ways of doing them and cooking flavours. also roasting the whole bird with the skin on wrapped in streaky bacon and get some blueberries or raspberrys nand cook them with a bit of butter and sugar till soft they will start to fall apart and break down in to a very coarse sauce it a lot of messing about but well worth it. try out and post back with your thoughts. happy shooting.
