Has anyone built there own smoker for smoking meat game and fish ?

If any one has could ye post plans or pics of your smoker here as i have had this idea in the back of my had for a while and would be gratefull for any tips or advice from someone who has ?

For small amounts and smoking in the field after fishing etc. I use 2 cheap turkey roasting tins,a cake cooling rack and sawdust/chips of a hardwood.

Place one tin on some rocks/bricks/barbie with a layer of sawdust in the bottom.

Put the cooling rack over it and place the meat or fish on this.

Cover it with the other tin and weigh it down with a suitable size rock,just enough to stop it blowing off.

Next light a small fire underneath(if using a barbie light it well before)and keep it going for the time it takes to cook the meat or fish.

Then just enjoy it-my personal fave is fresh caught Brown trout Mmmmm :devil:

I have one from Stamford smokers used to advertise in the back of sporting gun a few years ago, haven't seen them recently though, works a treat. Basically just a dustbin with a few shelves and a water pan and a coat to insulate and keep that heat in.
