henry d
For small amounts and smoking in the field after fishing etc. I use 2 cheap turkey roasting tins,a cake cooling rack and sawdust/chips of a hardwood. Place one tin on some rocks/bricks/barbie with a layer of sawdust in the bottom. Put the cooling rack over it and place the meat or fish on this. Cover it with the other tin and weigh it down with a suitable size rock, just enough to stop it blowing off. Next light a small fire underneath(if using a barbie light it well before)and keep it going for the time it takes to cook the meat or fish. Then just enjoy it-my personal fave is fresh caught Brown trout Mmmmm

Whitebridges
Does anyone have plans, or pictures of a smaller, non mobile version ? Cranfield unfortunately no. After a few attempts I bought an aluminium smoker. It's superb: See: Jensen

tenbears10
Hugh FW makes one in his TV series. As I remember it's just 2 metal dustbins and a length of ducting pipe. Shouldn't be too hard. Edited February 1, 2006 by tenbears10
Teal
I have one from Stamford smokers used to advertise in the back of sporting gun a few years ago, haven't seen them recently though, works a treat. Basically just a dustbin with a few shelves and a water pan and a coat to insulate and keep that heat in.

henry d
2 things though-don`t light anything on your wooden decking and don`t use softwood sawdust. The grid has foil under to catch the oil and moisture dripping off the food. henry d
Fish is great but you have to be careful not to overcook it,poultry is fine as long as it isn`t too thick a cut.
