markm Posted April 4, 2011 Report Share Posted April 4, 2011 Boil chopped carrots, chilli (1 red & 1 green without seeds, an onion in a veg stock cube with a load of fresh coriander, when cooked (45 mins or so) liquidise with a hand blender. (You basically have made a carrot and coriander soup. Add curry powder (to taste) and a good squirt of tomato puree into the mixture and bring to the boil, tomato sauce with sweeten it if needed. Dice (chunks, not fine) baby Sweetcorn, Sugarsnap peas and red salad pepper. Lightly simmer for 10 mins or so, add the pre cooked prawns for a further 10 minutes. Crunchy peanut butter (as long as you both are not allergic to them). bag of coriander leaf. Bag of noodles. Dead easy and takes 15 mins. Heat a small amount of oil in a frying pan or wok, add 2 handfuls of de-frosted prawns, along with a heaped tbspn of curry paste and as much of the sweetcorn as you like. Stir like mad. As the paste starts to thicken add some milk and a tbspn of peanut butter and lower the heat. Chop the coriander and put the water on to boil for the noodles. Floyd’s Royal Thai green prawn curry (One of the most exotic feasts to come from Asia) Ingredients Olive oil Green chilli curry paste Large prawns Coconut milk Green peppercorns soaked in brine Fresh Kaffir lime leaves Fresh basil finely chopped Method Heat the olive oil in a pan Add the green chilli curry paste and cook off a little Add the fresh prawns (de-shell if necessary) and mix well Add coconut milk and stir Finally add the green peppercorns and torn lime leaves Simmer for approximately 7-8 minutes Season to taste and serve sprinkled with fresh basil finely chopped Quote Link to comment Share on other sites More sharing options...

Well worth a go but it needs somthing else, but im not sure what. Its missing depth somehow.
