Prawn Curry?

Boil chopped carrots, chilli (1 red & 1 green without seeds, an onion in a veg stock cube with a load of fresh coriander, when cooked (45 mins or so) liquidise with a hand blender. (You basically have made a carrot and coriander soup.

 

Add curry powder (to taste) and a good squirt of tomato puree into the mixture and bring to the boil, tomato sauce with sweeten it if needed.

 

Dice (chunks, not fine) baby Sweetcorn, Sugarsnap peas and red salad pepper.

 

Lightly simmer for 10 mins or so, add the pre cooked prawns for a further 10 minutes.

Bag of ASDA frozen raw king prawns.

Jar ASDA red Thai curry paste.

coconut milk (About 200ml/half pint)

tray of baby sweetcorn.

Crunchy peanut butter (as long as you both are not allergic to them).

bag of coriander leaf.

Bag of noodles.

 

Dead easy and takes 15 mins. Heat a small amount of oil in a frying pan or wok, add 2 handfuls of de-frosted prawns, along with a heaped tbspn of curry paste and as much of the sweetcorn as you like. Stir like mad. As the paste starts to thicken add some milk and a tbspn of peanut butter and lower the heat. Chop the coriander and put the water on to boil for the noodles. Check the sauce for thickness and add more milk if necessary.

Just before serving add the chopped coriander, enjoy !!

We regularly have something similar. As well as the coriander, bash up some peanuts to sprinkle on top just before serving. "Dessert" will be guaranteed! :lol:

Keith Floyd's one has always served me well..

 

Floyd’s Royal Thai green prawn curry

(One of the most exotic feasts to come from Asia)

 

Ingredients

 

Olive oil

Green chilli curry paste

Large prawns

Coconut milk

Green peppercorns soaked in brine

Fresh Kaffir lime leaves

Fresh basil finely chopped

 

Method

 

Heat the olive oil in a pan

Add the green chilli curry paste and cook off a little

Add the fresh prawns (de-shell if necessary) and mix well

Add coconut milk and stir

Finally add the green peppercorns and torn lime leaves

Simmer for approximately 7-8 minutes

Season to taste and serve sprinkled with fresh basil finely chopped

That looks good Henry! Certainly sounds easy so may have that for me and my flatmate at some point this week, but maybe not tonight as I cant be seen taking things from jars or my status as culinary god might be damaged :lol:

 

 

the only thing to remember is if this is a possible sure thing just don't go cutting chillies with bare hands :oops:;)

That looks lush, If I can get Kaffir lime leaves then we might have a winner.

 

 

I suppose I could always take the lable off the jar of paste. Ive turned a few up on google, but a recomendation always helps , so cheers all.

and have to say it was bloody lovely! Well worth a go but it needs somthing else, but im not sure what. Its missing depth somehow. Anyway, it did as it was supposed to and greased the wheels very well :blush::whistling:
