Does anybody use a mincer?

I have used the mincer to make bunny & venison burgers which were lovely. However, when I made pigeon burgers I wasn't too impressed.

 

I'm sure someone posted a recipe a while ago where they minced pigeon breast and combined it with ordinary sausage meat to make a very nice burger.

I use a large hand cranked mincer to mince a lot of the venison I get. It makes a lovely chilli con carne.

 

I tried bunny burgers but didn't really like them - perhaps minced Pigeon would go nicely in a stew to rich up the sauce? I'll try it next time I get a few.

 

My small Spong mincer used to clog up with sinew very fast. It had two disks, one moving and one fixed to cut the meat. Since getting a larger one which has a four bladed knife and a single disk I've had a lot more luck as it cuts rather than grinds the mince. :good:

I have a big hobart which will do a whole roe in ten minutes. i double mince all mine.

 

I then freeze in 1lb balls. when i need i put two bags of vinison to a 750g pack of pork, add the sessonings and then hand mix. once happy i put though an Aldi mincer with the biggest holes.

 

a burger press was a god send. its so much easier.
