I have been looking to get a couple of decent cooks knives (everyone has a favourite knife they use leaving the rest sitting in the drawer - my favourite knife has gone walkies). I used to work near Smithfields and noticed that all the butchers had the same plastic handled knives that looked cheap but were seriously sharp. But back on topic, I have a cleaver and to be honest it doesn't get that much use - it's too heavy and blunt as you like. Hang on, perhaps I need a better one. I would also be interested in a normal stainless cleaver (as you previously advertised) and some butchers knives if you can get hold of more. I have even considered splashing out for a Global set, but a mate has some and says they aren't worth the money (also lots of counterfeit copies in from China). Very brittle, rock-hard steel - not exactly user-friendly. If you want good knives, try Henckels. I have a set of them, and they are faultless. Nothing beats them. Just like on a gun, all you need is for a miniscule amount of water to penetrate between the tang and the scale/handle of a knife, and you have a corrosion problem developing. Good knives should be washed by hand, dried immediately and returned to a knife block. Yes, it sounds fastidious, but Henckels/decent Sabatier knives are an investment. PB, if you want good dishwasher-safe knives, the fibrox-handles Victorinox knives are excellent, and embarassingly cheap. The same quality you get from a Victorinox pocket knife. PB, seriously, if you can find any good carbon steel kitchen knives (like the Mexeur Sabatier ones) at a realistic price, I will snap a few up. Mums a chef............. Sabatier are top of the list for her..... Mate has a set of Globals..................he says not worth the money.............. Try a google search for NISBETTS on tinternet...they do a full range of sabatier,,,victornox, Japanese and various outhers manufacturers....... I need a new set...........................Now wheres me mums brief case......................its like a clip from the film with Jean Luc Bessant getting his guns ready and doing loads of coppers......
