Basically I took a recipe from the internet and substituted pigeon mince for beef mince. I did mince both hearts and livers but no one else who ate it knew that and they all declared the dish delicious. A half hour in the freezer with breast fillets and offal makes them much easier to mince in my el-cheapo mincer. Already tried from the same source has been pigeon mince and tatties and pigeon spag bol. All spot on taste and texture wise.
