Jonty
A friend of mine raises a few sheep and I always get one from him for the freezer every year. I prefer the taste of older lamb so he always sorts me out with a/some/?? hogget - basically a sheep between 1-2 years old. We gave one of the shoulders a nice long slow bath in a bottle of red and some stock - it was proper fall off the bone tender and delicious to boot. TIGHTCHOKE
Blimey, it has been absolutely years since I have heard that name. It looks lovely, no dumplings for me though, just some roast potatoes and seasonal vegetables. Well done.
London Best
It seems impossible to buy mutton at retail outlets now in the U.K. It is eaten a lot in South Africa, and generally preferred to lamb.
