Hogget

A friend of mine raises a few sheep and I always get one from him for the freezer every year.  I prefer the taste of older lamb so he always sorts me out with a/some/?? hogget - basically a sheep between 1-2 years old.  We gave one of the shoulders a nice long slow bath in a bottle of red and some stock - it was proper fall off the bone tender and delicious to boot.

i knew shouldnt have clicked on this thread............a couple of big dumplings would have gone down well with that.........then the rest of the afternoon on the sofa checkin the backs of your eyelids.

Blimey, it has been absolutely years since I have heard that name.

It looks lovely, no dumplings for me though, just some roast potatoes and seasonal vegetables.

It seems impossible to buy mutton at retail outlets now in the U.K. 

It is eaten a lot in South Africa, and generally preferred to lamb.

i think you can get it at my local butchers but....like oxtail you have to order it  a week before hand...........do like mutton....a mutton roast with fresh made mint sauce..

We call them Weders here, no finer tasting sheep, raised on heather, machair [coastal wild flower meadows] and salt marsh, plenty of fat in the meat, home grown and local I always have it in the freezer

Yep, hoggets are the way to go if you can get them.
