Sussexboy
We decided to have fish for dinner this evening. So I visited the local fishmonger and had my wallet emptied. Six scallops and two pieces of halibut - £28!!! It all tasted good though. Starter was scallops on black pudding with pan roasted apple slices and a red pepper sauce enriched with the corals from the scallops. Main was pan roasted halibut on tender stem broccoli with garlic roasted potatoes and a sage and shallot butter sauce.

We still joke about those. Especially last week when I made apple and marmalade tarts. They were not good!

Google brings up a lot of recipes. Not one I have tried as scallops and black pudding are both high gout risks ....... and black pudding is not a great favourite for me. One of those I like the 'tradition' aspect (mainly as part of a full cooked breakfast), but it never quite lives up to expectations for me falling well behind the sausage and bacon for preferences. The halibut plate looks much more to my tastes.

I was a bit apprehensive about ruining it as so many sources say it is difficult to cook right. I don’t know if it was “right”, but it must have been pretty darned close as it was delicious and I would happily do it again.

Your cooking skills are far superior than mine , I have eaten a lot of the run of the mill type of fish that were either done at home or from the fish shop , the other night I had chunks of Monkfish , done them exactly as was written on the box and to me they were alright but wouldn't be in to much of a hurry to buy the same fish again . I think many (most?) fish are not very forgiving of being over cooked and for me a probe type thermometer (I use a Thermapen) makes things a bit easier. It goes dry very easily when overdone. Sussexboy
When I was a boy my grandma used to do dabs fresh off the boat dusted in flour then fried in butter. I can still taste them now just thinking about them.
