Good knife sharpener

Someone has lent me the lansky system but also gave me an adaptor so you could use DMT diamond stones with the lansky blade holder as well, these are quicker and easier than using the lansky stones.

 

You be amazed how sharp your blade is with these type of systems, for general kitchen stuff and touch ups I bought the crockstick turn box in the lansky link for a tenner on ebay.

I have tried a diamond sharpener which seems to put quite a good edge on my knives (When they need sharpening, which isn't very often) but I am finding that with a little care I can get just as keep an edge if I use a very fine Silicon Carbide Stone with a bit of oil on it! I used to have a Ceramic Sharpener for my fish filleting knife but I was not too impressed with it!

Well this thread has just inspired me to dig out my DMT sharpening kit (very similar to the lansky gear) and bring back to life my Bob Dozier skinning knife after I completely blunted it decorating (I know... who in their right minds uses a 200 quid knife for decorating.... but it gives a stonking finish to wallpapered corners and overlaps :o )

 

Took me a while as I hadn't realised just how much damage I'd done but the result..... fan bloody tastic. went through all the stones to extra fine and then followed Ray Mears Youtube intructions... Stropped it on my belt and finished it off on the window of my car! Then proceeded to show off to my wife, the result of which is a 2"x2" bald patch on my arm! :o :o :lol:
