In fact the shops aren't to good either. There is a shop in Usk that sells biltong and has a mail order type thing that also sells on the bay. Best just to make your own. Roe biltong is exellent. Your average tube steak in its original form would not fool anyone . Saying that I have ordered a few brands off E Bay and the quality is very varied , I think there was some " bush meat " amongst it as there was what looked like a monkeys ' pecker . welshwarrior Posted July 19, 2011 Report Share Posted July 19, 2011 Make it yourself easy cheaper and taste better (most of the time) and you can do differnet flavours. You need a box to put it in Cardboard does work. A bulb at the base of the box and a bar and plastic hooks to hang it on. I use a drip tray as well. Cut the meat into strips and wash it in Vinigar or Red Wine. Leave to drain and avoid contact with metal from now on. Spice with herd mix and stand over night. Hang it in your box for between 3-7 day depending on size of strip and your preference. Simples.
