Puff balls

Depending how big the ball is cut the top of and save, scoop out insides and mix with any chopped up game you have, or failing that minced chicken or pork. Add parsley, chives and rocket and a splash of olive oil and a small amount of chicken stock. Stuff mixture back in to ball and re-attach top using butter and wrap in foil to form a tight seal.

Cook in a moderate oven for around an hour depending on size.

Serve with onion sauce, its great.

 

Don't use balls that feel really squelchy. :good:

Somebodies been watching Hugh Fernley Wobbleyspoon :D

 

Ever since I saw that programme, I've had my eye open for a puff ball, but we don't seem to get them round our way.

Ever since I saw that programme, I've had my eye open for a puff ball, but we don't seem to get them round our way.

Yep i did see it on that program, spot on.

But i had tried it before he showed it to the world.

Our local know it all old boy( must be 120 by now) happened to be one of the local poachers many moons ago and used to cook it at the local Michaelmas fair just to show everyone he could. But they were great.

It's one of them things that you try and like so you make it anytime you get the chance

Puffball Pizza

 

Cut the puffball into ~1 inch thick slices

Cover the top of each slice with tomato puree, add cheese and cooked sausage, pinapple etc - whatever you like on pizza really!!

Put in the oven at 200'C for ~10 mins

 

Garlic Puffball

 

Cut puffball into pieces

Shallow fry in oil and chopped garlic for a few minutes

 

Gorgeous!!!
