Scottoj18 Posted August 26, 2013 Report Share Posted August 26, 2013 I was out at one of my permissions and saw tuns of blackberrys. So I got busy picked 2kg of blackberrys. Iv made blackberry gin, blackberry vodka and a load of smooth blackberry and raspberry jam. The gin and vodka should be ready for Christmas.. The first time iv done it and I'm chuffed. Jams amazing! aris Posted August 26, 2013 Report Share Posted August 26, 2013 After a bit of googling, I found what looks like what we have: http://www.fantes.com/images/3887.jpg Basically a strainer - but it has a metal scoop on one side which scrapes against the mesh and lifts the blackberry mixture, then on the other side it has a wooden roller which presses down on the fruit and mesh, pushing everything through. Wickedly clever - and a real time saver. The wild blackberries have a ton of seeds in them compared to the commercial varieties. We pick up some free apples for the pectin nearby too - so besides sugar and electricity - we have a few years worth of jam! Too much really - so we gift it to friends. If we have excess blackberries, we extract the juice, filter the seeds, then freeze it. scobydog Posted August 26, 2013 Report Share Posted August 26, 2013 Got 9 lbs the other day, a few bugs on them so washed them then froze them for a day defrosted and rinsed again, made jam with dried pectin, got it from the states maybe available here, made some b/berry and rhubarb crumbles, will pick some more for the gin and rumtopf that is brewing nicely. Scottoj18 Posted August 29, 2013 Author Report Share Posted August 29, 2013 (edited) 250grams blackberries 110grams sugar .. 70cl of gin in a sterilised jar and shake everyday till sugar devolves and leave for 3 months. strain out the stuff thats left and then the longer you leave it the better it taste. so i read! Same with the vodka .. activeviii Posted August 29, 2013 Report Share Posted August 29, 2013 i love bramble whiskey, i make to much as i drink way to quickly. to get the bugs out pour carbonated water over so its an inch on the top. the bubbles stick the the bugs and they float to top. fresh water and an old soda stream. blackberry and duck, oh no, the mouths watering thinking about food now.
