wymberley
Provided you're not out and out mud pluggin', then Yokohama Geolander G012 is a good choice.
aris
This website is quite good for finding out about tyres. You can search by car, type of tyre, or by tyre size - see what is available, and also read user reviews. http://www.tyrereviews.co.uk/ As you say - not much choice in that size. http://www.tyrereviews.co.uk/Tyre-Size/15-Inch-Tyres/255-70-15-Tyres.htm
andypaint
I've got exactly same size on fourtrak, and put on general grabber at2, brilliant tyre. But your right not much choice in that size, Bridgestone dueller do them. Best choice and prices is mytyres.could.uk

Dougy
You dont need to stick to the original tyre size spec. The rim size is of course important I have some 30X9.50R15 on mine. Just make sure they clear the arches and check full lock. I am sure you could go to 31.5 without problems. Oh! forgot not sure which Hilux you have, mine is the Invincible. If you have the standard HL3 they would have a different wheel size so obviously check. Or go to a decent dealer and they will sort you out
