Blackberries !

Easy-peasy recipe for blackberries can be done in five minutes:-

 

You need about 1lb of blackberries, an apple, a couple of tablespoons of fruit juice preferably apple, two tablespoons of brown sugar and a slice brioche loaf.

 

Put the thinly sliced apple pieces in a small pan, add the juice and sugar, stir and cook slowly for a couple of minutes then add the blackberries. Cook slowly until the ingredients are soft.Take the top slice of the brioche and lay it in a shallow round baking tray then take another slice, tear it in half and put it around two of the edges. Same for the other two edges then tear a slice in quarters diagonally and fill the gaps. Press the brioche down to fill any small gaps.

 

Use a sieved spoon to transfer some of the fruit and spread it on the brioche. Not too much juice at this stage. Add another layer of brioche in the same way and then ladle some more fruit onto that layer and add some juice so it soaks through. Another layer of brioche, add the rest of the fruit and pour the juice over it then cover with the rest of the brioche slices. There is just enough in a loaf for four layers. Press the top layer down and put the cake in the fridge for a couple of hours.

That was an early attempt. Adding the apple juice makes it a lot more moist.

We have two cane walking sticks which have been use to pull the larger fruits in to grasp, these were used by my Grandfather and my Grandchildren.

I have a thumb stick that was unexpectedly willed to me by an elderly acquaintance. It's too short for me to use for walking, but it's perfect for dealing with unruly brambles :good:

 

And to keep it on topic, I'm sure there will be loads around the country house (if the deal ever completes). Looking forward to sending Little Lord Seagrave in on my behalf :)
