Redgum
This should possibly be in the food section but may get more views here. Noticing my fallow are holding a lot of fat this year and was wondering if to throw it in with the meat while mincing. I did see on one of the meat hunter programs that the chap was saying to cut and chuck the fat as deer fat isn't good eating. Anyone throw some light on this, is it not worth using? shootgun
I trim all the fat off the carcases and add pork fat instead if needed.

Dougy
I would use it if making burgers or sausages as an addition to belly pork. Certainly wouldn't bin it.

Redgum
Omental fat or fat under the skin? I wouldn't mince gut fat Fat under the skin, always use belly pork for my burgers but just wondering if to bother trimming off or not, the ferrets love gut fat. kyska
I'd scrape it off and use it I think, if there was enough. Out interest, if you've got fatter animals is there fat around the kidneys? I'd definitely keep that!
herby
Give it the Ferrets it's not nice.
Walker570
It is a bit strong and easier to trim it off and use pork or beef dripping. Making game pie I use smoked streaky bacon and pork belly in equal amounts with the venison trimmings and breast meats from various birds. Suggestion, try mincing or better still chopping some pickled jalapenos and putting them in the mix.

That's interesting, it appears lots of deer have lots of fatty deposits this year, I can't help but wonder if the 'greener farm' stewardships are making them pre-diabetic😄 Edited January 16, 2017 by kyska
flynny
It's tallow fat mate, not good to eat, it tastes awful and will leave a greasy film on the inside of your mouth, Discard it and use pork fat Flynny
