I tried It that way (for the 1st time) yesterday with a cock I shot on Saturday and ended up just pulling the wings off and damaging the breast meat a bit. I still got all the meat off with a bit of knifery but I dont think I will be doing it again with hung birds. Its nice to have the bird all trussed up like a chicken in one piece so I guess I dont mind spending 10 minutes gettin the bird ready that way.
