aister Posted August 14, 2014 Report Share Posted August 14, 2014 My preferred way to cook ling is cut into chunks and boiled. Also, depending on the condition of the liver, boil the liver in a grease proof paper package along with the fish and mash it all up together and have with boiled potato's. aister Posted August 15, 2014 Report Share Posted August 15, 2014 Fish and liver mashed together is called stap here in Shetland and I love it. The liver on it's own is really strong but mixed in with the fish is excellent but the liver needs to be a good size and really light coloured, sometimes it's really small and red.
