It is the best Italian recipe ever

 

The whole Hare was marinated in a bottle of Chianti / bay leaves / garlic / rosemary and thyme  for two days.

Then the Hare was  browned with some streaky bacon and then was cooked for 2 hours in the marinade plus onions carrots celery tomato puree,  tomatoes and chicken stock .

After 2 hours the meat was removed from the bones ( mostly it  just fell off !)

 

Then the meat was put back in the sauce  to reduce for about an hour .

Pasta was fresh not dried ( but not homemade)

 

Served with a couple of large glasses of Chianti 🍷

 

Just do it !!!!!!!!!!!!!!!!!!!!!!!

I've eaten lepre (hare) ragu a couple of times in a restaurant at a shooting ground I frequent near lake Garda. What's on the menu often depends on what the owner has shot on his land so you can get game, deer rabbit or hare. 

Going to try this recipe with a rabbit I've been given.
