I ship the others out to restaurants and a dealer. As a principal I never waste anything I shoot apart from crows and rats, which are usually burned or burried. The meat is superb and makes either a great starter, a superb BBQ addition or a fine ingredient to a game pie. Much better than eating farmed rubbish and loads more flavour. I fry marinated pigeon breast served with mashed potato and crispy salad, wife makes excellen pigeon pies and they are also nice in stir-fries when thinly sliced. Sauteed with home made sweet & sour sauce on a bed of crispy hong kong noodles ---"AHHH SO" And a LARGE casserole of which half is poured into my flasks for the other team members to enjoy in these bitter, biting winds(pardon the pun) the next day. Pepe Posted March 11, 2006 Report Share Posted March 11, 2006 Pigeon is really tasty. It varies sometimes but,I always say to my friends that it is like a cross between beef and liver(cow). Sometimes,the liver taste is stronger than others, which is I don't mind because I love the stuff. A lot of people do not want to try it because of what it is. Once they do,they always want more.
