Today's Stalk

Went for a stalk today on an invite to another guy's permission.

After about an hour we came across 3/4 deer in heavy cover.

I picked the largest doe.

Shooting off sticks was tough, my heart was beating flat out!

After the shot rang out the deer made it about 15yards before dropping with a very good blood trail. I didn't know Anything could run 15yards after a .270 hit! On closer inspection the expansion wasn't great, the deer was possibly a bit on the close side...

Goes well with Lamb too :good:

I was recently given some venison someone had sat in their freezer for a while so I made Venison Lamb and shallot sausages with rosemary. They were bang on.

Also nice diced up a splash of olive oil in a pan drop meat in to seal. After five mins drop in some chunky onion or whole shallots some fresh lemon juice cracked pepper and sea salt to season and simmer for approx half an hour. Just before serving stir in a good teaspoon of red pesto.

serve with garlic and rosemary roast potatoes :good:

Yeah they are good and very good use for meat that you wouldn't normally use and also meat that has been damaged by the shot. I mixed 3 parts minced venison 1 part minced pork belly, 1 diced onion, parsley, sage, thyme, salt, pepper & porridge oats to help bind the mix.
