njc110381 Posted December 2, 2011 Report Share Posted December 2, 2011 Yeah, Opinel every time. I find the number 8 about the right size for general skinning and gutting. The handles can swell and make the blade tight to open but only if they get really soaked. Although not folding they are such a useful knife and mine is finding its way into the kitchen for all kinds of jobs. The edge stays sharp on the stainless mora for ages. Scully Posted December 4, 2011 Report Share Posted December 4, 2011 (edited) I've always been a sucker for a good knife,and amongst many others I have three Opinels.As others have said,steel sharpens easily and well.A gun who shoots locally brings with him a gala pie for the beaters and carves it into slices with the biggest Opinel I've ever seen....blade(and therefore handle)must be about 8" long,maybe more! Just remembered;the biggest Opinel(think it was real)I've ever seen was a display piece in a gunshop in Barnard Castle.Huge bloody thing! You want to see the display ones there, plus the made to order ones where they will carve it in store to your grip and design. But, prices even for the standard models are twice the UK price! They are just the job for gutting rabbits especially when you have a lot to do as you can have the blade half out and you wont Pearce the guts.
