Stonepark Posted November 17, 2015 Report Share Posted November 17, 2015 (edited) £2.65 a kilo for a 40kg carcass (live animal, less gralloch, less hide, less head and feet)= about 16kg of useable meat once bones, shot area, heart, lungs are removed), so already at £6.65/kg average. I assume your looking at venison steaks which is the prime bit of the animal and may total 4kg, remainder goes for sausages, burgers stews etc at about £9 a kg retail, so the only profitable bit of the animal is the 4kg at £25/kg retail and that has to support, marketing, storage, distribution, retailer margin, processor margin etc. Prices are usually in sync with steak/beef, and farmers only get £3.60/kg for beef cattle with a higher kill out ratio of 65% compared to 40% for deer i.e. about £5.53/kilo average and fillet steak goes for £30/kg. Not sure where you are getting deer into but none I know will take with head, feet, gralloch or pluck still in. Yes, in the jacket but that only a couple of kg. £30kg for boned out and stakes. £26.50kg on bone. £9kg for burgers and £5 a 350g pack of sausage. Bare in mind other meats and cereals added. £3.50 kg for game dealer price is, as always, diabolical and not changed in 10 years. JamesMoody3 Posted November 21, 2015 Report Share Posted November 21, 2015 The venison we serve in the restaurant usually gets shot for us by some extremely generous farmers who gives us a whole beast for free. I put it back on the menu last week due to a request from a local, so had to buy it in from our meat supplier, and a whole saddle cost £80. I wouldn't want to buy any red meat from a supermarket, let alone venison, as it is all a disgusting bright red colour, it hasn't been butchered properly, there is no decent marbling, no flavour and it's always vacuum packed in its own blood that absolutely stinks when the packet is opened after being sat in a moody supermarket fridge for a week or more.
