A Convalescent Meal ( Mallard Stew )

Well tonight I done a Mallard that had been hanging up for just over a week so this afternoon I cut the breasts off and used the rest of my veg , stuck it on low when I went out and then put it on high for a couple of hours when I got home , verdict , the duck breast ( only ate one ) was a lot more tender than my last one and overall it was alright , nothing special but worth doing .'

you are cooking some really wholesome food there john....when you are cooking try putting a spoonful of redcurrant or similar in the frying pan when its nearly done.....

I always would get a Duck when we where shooting if I could, I’ve got to say I prefer them to pheasant , partridge is another one I’d have before pheasant, that looked very good , at least you knew where it came from👍

Note I left the skin on the duck , and do it make any difference where you place it in the cook pot , I stuck the two in the pan and got the veg ready , I put the veg in fist and laid the duck breasts on the top , they were cooked alright and the ( gravy ) was very nice , my ole dog licked his lips when he finished the leftovers , I had a nice Blackberry and Apple pie but sadly I had ate enough and had no room for it , so that will be on the agender for tomorrow evening .:drinks:

Looks great MM 👍 😋 If you're not fully enjoying your food it could be due to lack of seasoning. Salt and pepper added during the process is essential,,,, then herbs, dried is ok, then as ditchman says, you can add other stuff like redcurrant jelly, a splash of red wine [cheap stuff], even a smidgen of mustard,,,, all to your own taste of course 😉

I've just had a quick chicken casserole,,,, took 2 hours from prep to eating it, and it was delicious 😋 😁 added rosemary and thyme, salt and black pepper, chicken stock [and stock cubes], little bit of garlic, then some onion gravy powder at the end just to thicken it up a little 😉

Hot and fast duck breasts for me. 

•    Score skin 
•    Heavily season with salt and pepper
•    Fry in pan with butter for 1 minute each side
•    Place in oven skin side down for 8 minutes at 200C
•    Rest for 5 minutes
•    Cut across grain

Evening JKD , it's not so much of enjoying my food it's a lack of taste buds as a lot of stuff taste the same , or if I can taste anything then it's a fairly dull taste , both Cod and Haddock taste exactly the same and I cannot tell one from the other , still there is not much I can do about that , I may have caught Covid at some time and that was how it left me , I am used to it now and some things are better than others so life have to carry on , looking forward to my pie and custard tomorrow night as none of that ever get wasted , come to think of it , very little ever get wasted when you keep a Labrador :lol:

I can fully understand that MM, as I've got sinus problems and haven't been able to smell or taste much for the last 10 years,  but,,,,,, I sure know when something tastes either good or bad, or even indifferent. I probably couldn't pass a blind food tasting test though 🤦‍♂️😄

Maybe you get more sensitive in tasting certain foods , I can eat a Apple pie and taste the Apples but I cannot taste the pie crust , maybe with the cheaper ones then that might be a good thing , I had one of those family ones from Morrisons once , it was only about a pound and when you ( try ) and eat it you can understand why , the crust stuck to your mouth and the filling look like a slimy mess , even my dog left some of it and that will tell you something :good:

looking at that picture ...your cooking skills are coming on leaps and bounds.........

do yourself a favour and by a bottle of cheap red wine and just use it for cooking......adding and reducing the wine with "le juice" will really cut thro to your taste buds....

Give it ago. When I first started duck shooting, I thought ducks were inedible, then I educated myself. Either hot and fast or low and slow. One sugar please 😀

Morning Simon ... I will try anything once I get the basics right , i still make plenty of mistakes but the food is now just about edible after I have made them , i have already found that the slow cooker is alright for certain veg , no good for greens but alright for spuds , parsnips and those of veg , I will try a fresh bag of casserole mix during the week with some stewing steak and see how that turn out , I am still waiting to hear back from Delia Smith about my  Christmas special which will be coming up shortly :lol:

Morning or afternoon Houseplant , I can already tell you are a decent guy , some of our ducks on the list are inedible and even Jamie Oliver or Gordon Ramsey couldn't make them taste like a duck should be , any diving duck on the list are not that good and the worst one for a surface feeding duck would be a Shoveler , lovely looking duck , or the drake is but taste very fishy , a bit like me really 😋

Morning old'un  , I think what little skill I have got is more of two small steps forward and then one large step back , I find it easy to get a variety of decent ready meals so I have something different each night rather than prepare something yourself , I don't mind doing the game or ducks myself now and again but once a week is enough , there might well come a time when I have to do more meals myself so now is all part of the learning program , by the way , the wind is still strong but no rain and it should improve as the day wear on .
