Would it make any difference if the Pigeon breasts were getting near the sell by date when they were put in the freezer in the first place ? , I very often have a few birds all hanging up in my garage at the same time , if I have got time then I process them and they go in the freezer along with the date when they went in , I have now got at least half a dozen that are ready to eat and three or four that are still hanging up , with our beaters day this Friday the birds that are in feather will have to go in the freezer and the brace I bring home after the next shoot will be plucked and eaten more or less straight away , the weather have been cold enough to hang the birds for a few days but this is not always the case , if the Pigeons were shot on a warm / hot day and left to cool off till the following day before they were de breasted then it must affect the amount of time they can be stored in the freezer ? , if you or the op shot the birds then you would both know how they were handled before you froze them , but if someone gave you them , how would you know they already decomposing when you obtained them . I have always tried to look after my Pigeons in the past as 99% ended up at the dealers and many a time I have let them cool off overnight and took them up fresh the following day , now and again one or two would get past my quick look only to find some of the fly eggs have hatched inside the beak , if the dealer spotted it he would just give the neck a quick turn and take the head off , if left for the rest of that day at home then that Pigeon would only be fit when frozen for a decoy . I tend to look at it this way. When they are frozen, the 'clock' is effectively frozen - and restarts when they are thawed. Having said that - my own usual practice is to freeze as soon as reasonably possible - and use after thawing overnight in the fridge. This gives the meat a fairly short time at 'decay' temperatures. Often, the meat is still rather below fridge temperature when I come to cook - and I do always use a cooks thermometer to ensure that the middle of bigger bits of meat reaches a safe temperature during the cooking process. I wouldn't as I don't take any birds off anyone else and I mainly know where and when the birds were shot and the condition they are in when they go in the freezer , but what I was referring to was if you or the op were given some Pigeons they could easily be near there sell by date even if they were only a few days old and then would they last up to a year when frozen ? Again, I would NOT put anything in to the freezes that was not A1, and if I didn't know the background it wouldn't be accepted. Not sure if I could afford to do my bulk shopping at Poundland , when I go in there they never seem to reduce anything , the other day I popped up to the retail park as I could do with a extra calendar , I went into the Card factory shop and low and behold they had just reduced there calendars and diary's on that day , They had some lovely Norfolk calendars with a page for every month and some nice local photos all for the grand sum of 10p each , they were such a bargain I bought two and a diary to put my dates in , at the moment it is still in brand new condition with no entries Quote Link to comment Share on other sites More sharing options...

Just the breasts (off the bone) little bit of oil plus a good shake of Lidl own brand chicken seasoning . They both turned out very well. Yesterday I was going through the freezer to make room and found 2 packs of partridge at the bottom of a drawer. Vacuum packed and dated Jan '22 - don't know how I over looked them. The other bag was fine and looked perfect. Not that dissimilar to the fresh ones I cooked on Sunday. 2 hours in and the 3 of us are all still standing. I was a bit hesitant about getting one but really couldn't complain about anything. It does take a bit of getting used to but I wouldn't be without it now. It is good news that you are still ground level and you enjoyed your Partridge feast , hope you have a good day on the beaters shoot , pity you are so far away as I have got several Pigeons you could have f o c , these are fairly fresh and wouldn't be much over two years old , maybe edging towards three but not quite as old as your Partridges , from the outside they look like Wood Pigeons but what they taste like then that would something I would leave you to find out . I did once have a memorable guinea-fowl curry in Bradford in the 70s and I bought some partridge breasts from Abel and Cole recently, a first for me, and they were delicious.
