Good old chicken casserole,,,,,

,,,, and it was surprisingly delicious 😋  My first ever homemade chicken casserole, with ingredients found in a Waitrose one, but with added potatoes, swede and a splash of white wine 😃

Will whizz up the small remaining amount into a soup early this coming week.

That would suit me down to the ground JKD , the casserole I done during the week was the one I enjoyed the most , if anything it was done in the slow cooker slightly longer than it should had been but better than not long enough , I have got a couple of packets of Waitrose Chicken breast that I will use both together in a casserole in the week , 

I was given a bottle of White wine on one of the shoot days I went on so I might use it up , did you add wine to the end result , or done it in White wine ? , I don't wine at all so I doubt if I would do it all in White wine , maybe add a little in the cooking process .:hmm:MM

@marsh man There's definitely a method to follow, so I'll write it up probably tomorrow evening if you need it ? And it's only a very small amount of white wine being used 😉 I've said it previously,,,, you can add lots of little amounts of things to meals and you would never know they were in there,,,, they just make a slight difference, which is noticeable. It's like cooking a nice dinner and forgetting the salt and pepper, but once added it tastes totally different, but you can't actually taste the S and P 👍

yup you are right......flash fry the chicken and vedge before you put it in the slow cooker

The ingredients list I used for this are,,,,,,

Chicken thighs, boneless, no skin.

Marinated this in 3 finely chopped garlic cloves, dried rosemary and thyme, and a small glass of white wine [45 minutes].

Half a large onion. Diced.

Two carrots. Chopped.

Half a swede. Chopped.

One parsnip. Chopped.

One leek. Finely sliced.

3 small potatoes. Chopped.

500g chicken stock.

2 rashers smoked streaky bacon. Cut up small.

4 chestnut mushrooms. Chopped 

Salt and pepper,,,, a few drops of lemon juice,,,, chopped parsley.

So quite simple, with not a huge amount of different ingredients 🙂

Chicken thighs complete with skin, rather than breast, will give a better flavour to a casserole, as well as being cheaper. Just fish them out and skin and debone them before serving, or not.

Dry white wine is the staple of classic chicken cookery. As Keith Floyd was said to have said "I like cooking with wine. Sometimes it goes into the food".
