This is a favourite of mine - Hairy Bikers style...

I'm also just a fan of cutting them into fine strips (a Julienne if you will) and doing the same with some butternut squash, then steaming lightly

followed by a squeeze of lemon juice and some butter and black pepper

 

 

Courgette and feta fritters

Serves 4-6

 

Preparation time less than 30 mins

Cooking time less than 10 mins

 

Ingredients

 

900g/2lb courgettes, grated

salt and freshly ground black pepper

bunch spring onions, white part chopped, the green part discarded

2 tbsp chopped dill

2 tbsp chopped flatleaf parsley

3 free-range eggs

1 tbsp paprika

225g/8oz feta cheese

225g/8oz plain flour

groundnut oil, for deep frying

slices lemon, to garnish

 

Method

 

1. Sprinkle the courgette with salt and allow to drain for 20 minutes.

2. Place the grated courgette in a clean tea towel and squeeze out the water. Mix with the onions, dill, parsley, eggs, paprika and freshly ground black pepper.

3. Work in the feta cheese and flour.

4. Heat the oil in a deep, heavy-bottomed pan. It is ready when a breadcrumb that is dropped in will sizzle gently in it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)

5. Carefully fry tablespoons of the mixture in the hot oil until golden. Remove with a slotted spoon and drain on kitchen towels. Garnish with slices of lemon and serve immediately.

Try the yellow ones, often called Zuccini, they are often sweeter too.

 

I was brought up calling all courgettes (both green and yellow) Zucchini, which is the Italian word for them, and the word most used in the USA. I lke them very much in all sorts of food.

Great as part of Roasted Mediterranean Vegetables:

 

2or3 Courgettes sliced 1/2inch rounds

2 Red Peppers chopped into to 8 peices

2 Red Onions sliced into quarters and halved again

1 Aubergine cut into 1/2 inch chunks

2 Hands full of cherry tomatoes

8 cloves of garlic lightly crushed in skins

1 Tbls of chopped basil

1 Tsp Paprika

3 tbls spoons Olive Oil

Salt n Pepper to season

 

Heat oven to 180c. Place all ingredients in roasting tray, coating thoroughly with seasoning and oil. Bake for 20 mins and turn all ingredients over. Bake for further 20 mins or until roasted the way you like it.

sliced and lightly fried in butter as a veg on its own,or you could try stuffed courgetes-put in oven whole and partialy cook,get refried beens/taco sauce and cheese and heat in a saucepan,take your courgetes and slice a lid off from end to end and scoop out the soft centre,fill with the beens/sauce/cheese mix and put the lid back on,secure with half coctail sticks,cover with tin foil and return to the oven,then enjoy :good: B) :o

i make courgette and mint soup and eat it chilled wen its hot tastes great with a glass of rose while sat in the garden

any chance of posting your recipe and i will give it a whirl as i have got 5 plants on the go and want to try various cheers holly :hmm:
