oscarsdad Posted November 29, 2011 Report Share Posted November 29, 2011 I did hare loin wrapped in pancetta and then rubbed with pepper and juniper berries, marinated in whisky then pan fried and flambéd - it was awesome! Cook bones and the rest of the animal in red wine and stock until tender, add flashed meat and use to fill a pie with the kidneys if you like them.
