Archie-fox Posted October 16, 2013 Author Report Share Posted October 16, 2013 Had the grouse this evening, we have an ancient aga recipe book for which the game recipes start like "first go out and catch a medium sized hare" etc. Put a knob of butter salt and pepper inside the grouse and stuffed some herbs from the garden inside. Trussed it up and wrapped the breast in some bacon and roasted the whole lot on a piece of toast for about half an hour, with 15 minutes resting with some chips cooked in the juices. Grouse is not like any other game bird and seems to have an individual flavour, a little gamey and very tender. It's people like you that we all owe a duty of respect to, for keeping our sport alive, and giving the young ones the chance to experience something very special. Good on ya. Surprisingly my legs were fine once i had got home, although the rest of my body was knackered, and i have come down with flu this morning. At the time though my ankles and feet were well beaten from walking through the heather, and getting back on the path was a blessing! as the ground is so uneven under the heather, and you are trying to cover ground, put up grouse, and be ready to shoot at a moments notice.
