Horseradish sauce

Does anyone dig up horseradish from the road verges  and make their own horseradish sauce

 

me old mum used to ..and as far as i can remember the ingridents were

  1. dig up plant with a nice root and clean
  2. finely grate
  3. add malt vinegar
  4. add cream.(or top off gold top milk)
  5. think she also added a small ammount of mustard powder

No, off topic I know but I found a good source of wild garlic in a wood today 😋😋😋

my wifes grandad loved his radish..got it on yarmouth market...just grated and white vinegar and salt........they used to have sunday roast on a saturday as they let the range go out on sunday (during the summer)...so he would eat cold on sunday...his mrs used to giggle as she would watch him with the tears running down his face and water coming out of his nose:lol:..daubing radish on his cold beef and the juice...

he was a sucker for punishment

It used to be a big thing in my area back in the day. At that time we had a factory that processed it, and it was a  good money earner. Some of the local diggers had licenses from British Rail to dig on embankments and cuttings. Our verges are full of it.

At my late parents' house we had a patch of horseradish and, yes, my mother's housekeeper made it fresh. Nothing better than rare roast rib of beef served cold the next day with horesradish in a sandwich so strong your eyes water. I sometimes buy it when at Versailles. Sold as "raifort" there in France.

i use an old recipe

grate the radish and leave in hot water for about 10 mins or boil for a few mins to soften 

mix  white wine vinegar touch of english mustard bit of sugar ( caster is better)  bit of salt and pepper and double cream mix it all up and add drained raddish   bloody lovely  you can also mix cream fraiche insted of cream if you want it a bit thicker

My parents had it growing on what was almost waste ground.  We tended to use 'boughten' as making it was not the nicest task as it does bring tears to your eyes - much worse than onions for that.  I use Morrisons 'hot' horseradish as a favourite.  Also nice (in small quantities) in coleslaw and when 'perking up' mayo for having with cold seafood.
