ditchman Posted October 19 Report Share Posted October 19 tandorri ...no oil in the marinade just spice/dem sugar/lime zest/lime juice couscous cooked in chicken stock ...fried up spring onions...onion...madras powder....then added presoaked chopped dates and sultanans......then added couscous )cooked)...stirred it all together and put the lid on the wok and did the skewers couscous was totally supreme.....i will do a spanish version of chicken couscous next time... I find it can be a bit hit and miss getting the timing right; too short and it can be 'gritty', and too long and it turns to porridge. The rest looks great. I note you can get lime juice 'bottled', so I maay have to add some to Wednesday's order. https://www.ocado.com/products/m-s-lime-juice-522441011 one of the things about getting coucous right is timing.............if your couscous goes wrong its usually because you/it hasnt had enough time UNMOLESTED in thepan i use 1 mug of water to one mug (or a little bit less) of couscous..........bring water to the boil ..add chicken stock let it melt/mix...pour in couscous swill it about ...let it boil for 30-60secs...turn heat off ...COVER with a plate or summat and LLLLEEEAAAVVVVVE...........................FOR AT LEAST 10 MINS ...do not touch or lift the plate.....dont meddle with it........then sccrape it out with a fork and it will be nice and fluffy...into a bowl or frying pan to be mixed with other stuff of your choice...
