Venison curry and coconut saffron rice

'A good pinch' of saffron - but I do like saffron....

The recipe for the rice is - x4 table spoons of ghee, x3 cloves, x3 cardamon pods, x3 cinnamon sticks - all lightly fried in the ghee for a few minutes.

Then add x2 cups of washed basmati rice, as well as a 'good pinch' of saffron, salt to taste, and a tin of coconut milk mixed with water to make it up to x4 cups - then cook the rice as you normally would (which in an AGA is bring it to the boil, and then put it in the simmering oven for 15 minutes with a lid on)

OK, having now looked up - cassia and cinnamon are related (I think cassia is a subset of cinnamon).  It was just that the recipes I use seem to usually call for cassia in rice.

Thanks - curried meatballs are delicious.

That would have GAVOSTON written all over it , before bed and again when I turned out , and not forgetting my bathroom window would have to be opened slightly after the toilet was flushed :drinks:

That's fair enough - I shoot with a number of people who can't stand to be in the same room as a curry.

The pigeon meatballs are about 2/3 minced pigeon, with the remaining 1/3 made up of either pork belly or the fatty bits from those packs of 'cooking bacon' / off cuts that you can buy in the supermarket (also minced) - with whatever seasonings you want.

You can also make it go even further if you want Italian style meatballs, which have bread (with the crust cut off, and soaked in milk) incorporated with the mince.

Partly some of each T C  , you know I don't use some letters if they are not really  necessary :lol: anyhow , didn't Glen Campbell sing about Galveston :hmm:

No , far to old to head off out that way , I did once go to the cowboy country and even had cowboys cook our dinner / tea with steak and sweetcorn done on a B B Q , with a huge jug of root beer in the middle of the long table we were sitting on . there yer go T C another bit of useless information :lol:

Well the simplest and quickest Sweet and Sour Sauce recipe that I know of is;

Pineapple juice or brown sugar as the sweet element.

Vinegar for the acidic element.

Tomato ketchup for the colour.

Some Soy Sauce to adjust the flavour.

Mix and warm.

Experimentation is key to get to the taste you like.
