new to the flock Posted July 8, 2008 Report Share Posted July 8, 2008 There is a new book out; Preserves: River Cottage Handbook No.2 I do alot of perserving so I think I will order this one for the recipies if nothing else. Just wondering if anyone has any of the following and what they think of them. Handbook No. 1 : Mushrooms River Cottage Meat Book River Cottage Fish Book or any of the others? It's a good read, but there are better books out there. The drawback is it is trying to be a complete compendium, but you're only getting half a story. As Fatcatsplat said, they are more like narratives with recipes along the way than simply an out-and-out list of recipes. The meat book, for example, is split into 2 sections: 1) Understanding meat -Meat and Right -What is good meat -Buying meat -Beef & Veal -Lamb & mutton -Pork & Bacon -Poultry -Game -Offal 2) Cooking meat -Roasting -Slow cooking -Fast cooking -Barbecuing -Preserving and Processing -Meat thrift -The trimmings Each of the main chapter headings above is broken down into further sections. Personally, I think they are great but I'm a novice. If you already have a good understanding of food and cooking then I guess you wouldn't get as much from these books as I have taken. Very informative, as has been said, not a specialised compendium of charcuterie etc but an excellent start for a novice like me, balanced and well reasoned. Zapp Posted July 30, 2008 Report Share Posted July 30, 2008 I have the River Cottage Meat book and IMHO it was worth every penny. I use it because I like to buy cheap cuts of meat and turn them into something special. The book is excellent for this kind of thing - it identifies and suggests the best ways to deal with the less regarded cuts like neck of lamb you can get at a butchers for next to nothing, and build a feast for £5-£6 including veg (ie irish stew or lancashire hotpot). I came across a new copy of the Meat Book at chapters the other day but they wanted over $60.00 for it. Amozon can be okay but is still a bit steeper than My budget is allowing for just now. NTTF I've not seen any secondhand as yet. I guess that they are mostly the kind of reference book that most people would keep. Maybe ebay just after Christmas if people get given duplicates? Jan147 Posted April 30, 2009 Report Share Posted April 30, 2009 I have got the preserves one as I make lots of jams etc I make a lot of things from the hedgerow, jams/preserves like Crab Apple and Rowan Berry Jelly. I like to experiment with different ones and see what they turn out like. Only book that has really taken my eye so far and I found it a really good book and good tips in it. Not that many books about preserves about. Keep debating about the new vegetable one but have so many books on cookery/gardening that I keep thinking do I need another one. DanRM Posted April 30, 2009 Report Share Posted April 30, 2009 (edited) I have the River Cottage Year Book, its the best book i myself own. I used the recipe for the game pie and adapted it a little bit. people offered £5-£7 a pie which was the size of a pukka. I hope to get this preserve one and i also hope that he will make a book on foraging and include recipes for like his elderflower champagne and sloe gin, as last year i made a brew of blackberry vodka, and only made 2litres as a test so im going slow on it as im down to the last 500ml.
