Christmas dinners how you do yours I mean last year we did a roast year before went out for a curry that was good and different 12 year ago was in Australia barbe q shorts and t shirt beers flowing that was excellent year after barbe q at home 1/2 lb steak on it was missing the oz life style some times Christmas gets a bit bland same thing every year roast turkey it's good to mix it up with different food what you do ?

old school turkey and stuffing for me, i hate traditional roast dinners so christmas day is generally the only one i have through the year... i think my dislike of cooked dinners comes from my dads cooking skills (raf trained chef) everything on the plate tastes the same and you slice the gravy rather than pour it :lookaround:

Rolled Loin of Rabbit

 

Cream of Pheasant Soup

 

Venison & Duck Terrine with Spiced Plum Chutney, Freshly baked Bread Roll

 

Trio of Confits, Goose-Hare-Squirrel

 

Pigeon Breast wrapped in Pancetta

 

Rosemary Roasted Goose Fat Potatoes & Parsnip, Honey Glazed Carrots

 

Christmas Pudding Ice Cream & Mince Pie

 

And very nice it was to, followed by trying out Sloe gins and Damson Vodka's etc tooooooo many to remember exactly

Interesting food here but it still the bland Christmas dinner turkey turkey for Boxing Day got to say roast beef to me is the one meat I have not been able to get right I think are oven on its way out tried 3 , 4 times over the last year or so put it in for the required amount of time and it still comes out tough as leather and shrunk 😱I went to catering collage and worked the industry different in the old works kitchens ovens were better and got it right

This year I have a 4 rib roast from a Shorthorn bone in, I have had it before and can honestly say it is the best beef I have ever had, it's so juicy and the flavour is unbelievable.

 

Makes me hungry just thinking about it.

 

Now your talking!! I'm cooking again this year;

 

Pea broth as an amuse bouchée

 

Gary Rhodes prawn cocktail (I know sounds ****) but its built up as a tower with roast pepper rings and three sauces

 

Full forerib of our own farm beef. I'm doing a Jamie Oliver (I know pain in the **** but good chef) recipe with roasted beetroot and horseradish

 

Vanilla panna cotta with raspberry coulis

 

Cheese board with the port

 

Final course of Zantac and Allopurinol
