farmerguy.22 Posted October 8, 2006 Report Share Posted October 8, 2006 If you want Hares i reckon Suffolk is the place to be as we have hundreds just on our 600 acres alone, you are more likely to see a hare than a rabbit most of the time!! Not sure what it is like in other parts of the country? What about Norfolk WB? Mind you we dont shoot many until they get a bit over populated then might have to do a bit of thinning out to get the numbers back under control! We saw well over twenty and shot 4 in total because it's better to leave them for the time being. All the cover is a bit green at the moment. We saw half a dozen rabbits all day. We have lost a lot of water in the ponds and the quack quacks have left. North Norfolk is brim full of hares.After the turn of the year we'd expect 300 plus or so at the hare days.The shoots are having to take more after the demise of coursing. Hare Casserole Ingredients 2oz butter 2 cloves crushed garlic. 1 hare quartered large slices of carrot, parsnip 1 onion, chopped A pint of stock Half a bottle of red wine 3 tbsp freshly chopped mixed herbs 4 oz mushrooms Cornflour, blended with a little water to thicken salt and freshly ground black pepper Method 1. Preheat the oven to 180°C, 350°F, Gas Mark 4. 2. Melt the butter in a pan, add the garlic and fry the hare portions on both sides, until golden. 3. Transfer to an ovenproof casserole dish with the carrots, parsnip, onion, stock, wine and most of the herbs. 4. Cover and place in the oven for 1 1/2 hours. 5. Stir in the mushrooms, blended cornflour and seasoning. 6. Cook for a further 1/2 hour. 7. Sprinkle with the remaining herbs before serving. 8. Serve with creamy mashed potato.
