Chop leeks into 1" ish lengths and rinse, without drying water off them put in pan with melted butter and sprinkle of black pepper. Press a layer of tinfoil down into the pan on top of the leeks. Put on pan lid and cook slowly till leeks done. The other one is cauliflower with butter sauce. Cook cauli as normal drain and serve.
