muncher
I’m looking for a reasonable priced knife for breasting birds etc. I’m looking for one that can keep a decent edge and not cost the earth. Tia.
Smokersmith
https://heinnie.com/mora-curved-boning-knife/ Sharp as hell, cheap, good grip, and narrow enough to get round the fiddly wing bone bits. You may find it a quid or two cheaper elsewhere.
Ultrastu
Fixed blade , slipjoint , or locking ? Personally I use a fixed bladed knife with a long thing blade (a boneing knife )
243deer
As per smokersmith I just use a 6" boning knife

GingerCat
I use a whitby filleting knife. From hennie and cost about 8 quid. For breasting birds I find a filleting knife much easier. Couldn't see that knife on there when I checked but there's others for a little more. The bendy blade makes the difference.
Graham M
Why not pay a couple of quid more and make your own little gem. looks OK for Pakistani Damascus and not too expensive should you lose it. https://heinnie.com/knifemaking-damascus-knife-blade/
