Chilly dipping sauce, drop of white wine or cider vinegar, Demerara sugar and chopped corriander leaves. Far better than commercial mixes

You need Pineapple juice, light brown sugar, Apple cider vinegar, ketchup and Soy sauce thickened with cornflour. Stunning flavour and you can freeze any leftovers. Thanks. 240ml decent pineapple juice (Tropicana seems best), 150 grams light brown sugar,80ml apple cider vinegar, 3 tablespoons tomato ketchup and 2 tablespoons soy sauce. Bung it in a pan and mix/heat then make a cornflour slurry using 1.5 tablespoons cornflour and 2 tablespoons of water - stir this in until you get your desired consistency. Easy and I have never tasted a better sauce.

That doesn't surprise me, but I was referring to the days now long gone when Chinese take aways made their own sauce - these days I believe they buy it from wholesalers.
