I've never had mutton but slow roasted shoulder of lamb is one of my all time favourite meals so a more flavoursome version of that is mouthwatering idea. Enjoy! The price has crept up recently as it has for all the so-called 'forgotten' cuts. You used to be able to get a couple of kilos of Ox cheek in Waitrose for just a few quid, can't now.
