v5uk Posted August 30, 2012 Report Share Posted August 30, 2012 Fox Curry Ingredients 1 tbsp vegetable oil 40g butter 1 kg Fox Meat, chopped into 3cm chunks (Meat from the hind legs is best) 2 onions, finely chopped 3 cloves of garlic, finely chopped 2 cups beef stock 400g can chopped tomatoes 2 tsp cumin powder 2 tsp corriander 2 tsp paprika 2 tsp garam masala 1/2 tsp turmeric 1/2 tsp cayenne 1 tsp yellow mustard seeds 20 fresh curry leaves 1/4 cup white wine vinegar Heat half of oil and butter in a large deep pan over high heat. Cook the Fox Meat in batches then browned all over and set aside to rest. Heat remaining oil and butter in the same pan. Fry onions, cumin, coriander powder, paprika, garam masala, turmeric, cayenne, mustard seeds and curry leaves till fragrant. Return the Fox Meat pieces to pan. Add white wine vinegar, stock and tomatoes. Stir well and bring to a simmer, uncovered. Simmer for 1 1/2 to 1 3/4 hour till the Fox Meat is tender and sauce is thick. I would go with out of sight n away from the public would be sensible, but as far as I am aware if it's livestock farm it should be burrid well as not to spread deseses.
