Diamond stones are very good, but unless you are quite practised, the aligner is very helpful in getting the right angle. There is a very good set with different grades available. I was the one who used to have to find there knives because someone nicked them. Or the lads asking me to sharpen them. I used to use an old sandstone wheel in a well of water with a foot peddle. The knife I was able to get the sharpest was my ray mears bushcraft knife which is 01 tool steel. Just used it on a Norton oilstone and then stropped on leather belt, scary sharp. mick miller Posted February 15, 2016 Report Share Posted February 15, 2016 (edited) Admittedly, I don't do anywhere near the amount of yrehctub that Colin does, but when I'm called upon to stand in in the shop for a day or two I use the lansky on my steak and boning knives the night before and fetch them up with the steel I linked to. That will do a solid days boning out and cutting legs, loins and shoulders of pork, legs and shoulders of lamb, chump chops, barnsley chops, quartering chickens, quartering rabbits with just a touch on the steel here and there. Plenty sharp enough to do all that. What more do you want from a knife? These are Sheffield steel blades but really, nothing special. After stoning and honing I use the top edge of a car window. Half a dozen gentle strokes either side had a blade with a fantastic edge. You have to accept when you first do a knife it takes some time. But once it's done it's very quick to top up. Never used a strop though.
