This Beef Wellington was made by one of their chefs and consists of Chateaubriand fillet which is wrapped in a layer of mushroom with truffles, then a chive pancake and then a shortcrust pastry. marsh man Posted Sunday at 10:03 Report Share Posted Sunday at 10:03 That would be a special treat for me , it look very , very tempting and might have something like that for my next birthday as you never know how many more you have got left 😛 Not on the same scale but at one time we used to get a game casserole with a crust on it for our shoot dinner , this came in a big metal tray and what was left me and another bloke filled our lunch box up and we often had it for tea with some fresh veg , anything we didn't want then my two Labs at the time would finish it off . There seem to be variations on what is put around the beef, but a mushroom base is the most common, though some use a layer of ham and/or pâté. I have never tried to make it, but I believe getting the beef cooked 'just right' and the pastry crisp and not soggy is quite skilful. But I shoot regularly in Lincolnshire on an estate which grows anything up to a thousand acres of carrots each year. The carrots at the shoot lunches there are something else. MM Of course they end up in the supermarkets. Why they no longer taste of carrots when you buy them is a mystery?
