The way Iv been show and get on well with is : * Pee the rabbit. * Hold up by the back legs belly facing me. * Take the knife and pinch the blade between my thumb and first finger, so only an inch at most is pertruding my finger and thumb. * Puncture towards the back of the rabbit belly and draw down to an inch short of the ribs. * Turn bunny over and let guts fall out. * Feel in for the big stomach lump (?) and pull out clean leaving: heart, lungs, liver and kidneys inside . hyflier Posted April 20, 2010 Report Share Posted April 20, 2010 (edited) A little differently: I lay bunny on his back with the head to my left, having pee'd it. I take hold of some loose skin at the base of the ribs and pull up, I then slide the knife in, away from me piercing both sides of the loose skin and slice down towards the back legs, this leaves a strip of fur which can be cut off. This exposes the bare skin with the intestines just below. I do the same again, lifting the loose skin away from the guts and slide the knife in, again piercing both sides. This leaves a large hole where I can get my forefinger and thumb in and lifting the skin away each time, cut down to the pelvis. Back at the ribs end, I carefully move the liver away from the diaphragm and make a small cut, I insert two fingers and feel for the heart and lungs I then hook my fingers around these and pull gently down until back at the two sides of the diaphragm, lift up bunny and pull down, the whole lot ends up on the floor, kidneys too, and I have a very clean rabbit for the pot. :( Edited April 20, 2010 by hyflier Quote Link to comment Share on other sites More sharing options...

Stand up, holding the rabbit's back in your palm with your thumb round it's right shoulder. This means the rabbit is then hanging downwards at the perfect angle. Push the knife gently through the skin above the rabbits sternum (where the ribs meet in the middle), this will stop the knife going in too far. Now make a downward slice all the way down to the wedding department. Put down knife and put your index and second finger in either side of the stomach, quick pull down and out it all comes. Use your little finger and push through from the inside towards the outside. Once you've done it a couple of times and put your mind in a different thought zone it's simple!! George1990 Posted April 22, 2010 Report Share Posted April 22, 2010 Anyway is easy if your knife if really sharp. Mine's always blunt which makes life difficult. I stab in by the testes, up and into the sternum, then cut through the membrane under the skin after. Shake it about, tut my hand in a carrier bag and go up to the diaphragm and yank it all out, then take the heart and lungs out. I use a hatchet to whack it's head and legs orf. Then hold the rabbit by the front legs, enter the point of the blade just below the point of the ribcage and slice down towards the bottom. Place 2 fingers in and pull out the stomach (everything else comes with it), this leaves the liver and kidneys still in. I always paunch them as soon as they are shot and skin them when needed. Paul@Ribchester Posted April 23, 2010 Report Share Posted April 23, 2010 I think I have mentioned it before on here but I have found "push gutting" the easiest, cleanest and quickest method. There is a vid on youtube, but basically you just hold the rabbit by its front legs, then start squeezing downwards under its ribs, almost like your wringing out a wet cloth. Keep going downwards then all of a sudden everything comes out of its backside!! Takes about 5 seconds and as I said no mess. Give it a try and let us know if it works for you. Paul.
