Walker570 Posted January 14, 2021 Report Share Posted January 14, 2021 in 1985 a friend from the USA brought me over as a gift a full set of kitchen knives made byVictorinox of Switzerland, they are still like new and come up like razors, showing very little if any wear from everyday use. JohnfromUK Posted January 14, 2021 Report Share Posted January 14, 2021 Perhaps not what you are looking for (in that they are not strictly 'custom'), but Zwilling (I believe the high end brand for J.A Henckels) and Wusthof both make very good knives. Not cheap, but a good deal less costly that 'custom'. I have some Zwilling - and some older Sabatier, but the Sabatier name has also been used on some lesser quality things. You can still get the older types which I think are are the quality they used to be. Is they are Chinese, it is unlikely to be vg10 as that doesn’t leave Japan much.
